Scrambled Eggs with Cauliflower

Ingredients

  • 2 large eggs
  • 4 large egg whites
  • 1/4 cup reduced-fat sour cream
  • 1/2 cup cauliflower puree
  • 2 Tbsp. grated Parmesan
  • Pinch of salt
  • Nonstick cooking spray
  • 1 tsp. olive oil

Directions

  1. Whisk eggs, sour cream, cauliflower puree. Add Parmesan and salt.

  2. Spray skillet, set on med-high heat.

  3. Add the oil.

  4. Add the egg mixture.

  5. Reduce the heat to low, stir frequently.

  6. Cook 2 to 3 minutes.
