Split Pea, Lentil, or Mung Spread

Works well with Tofu Mayonnaise and black olives on corn bread.

Ingredients

  • 1 cup legumes
  • 2 cups water
  • salt to taste

Directions

  1. Cook the legumes (in proportions: 1 cup legumes to 2 cups water) until soft, about 45 minutes. Drain off excess water.

  2. Puree to the consistency of applesauce. Salt to taste.
