Quiche

This is an absolutely foolproof, fluffy, perfect quiche recipe!

Prep time: 20 minutes
Cook time: 40 minutes
Serves 6 people

Ingredients

  • 3 eggs
  • 1 c whole milk
  • 3/4 c Hellman's mayonnaise
  • 1/4 c sour cream
  • 2 tbsp cornstarch
  • Salt and pepper
  • 1/2 lb bacon, cooked until crisp and diced
  • 3-4 scallions (green onions), finely sliced
  • 1/2 lb swiss cheese (grated) and
  • 1/2 lb monterey jack (grated on large holes)
  • Frozen pie shell (I prefer Marie Callendar's)

Directions

  1. ir cornstarch into mayonnaise, add sour cream, stir until smooth. In a mixer, beat eggs and milk together. Add cornstarch mixture and 1/2 tsp each of salt and pepper. Preheat oven to 350. Sprinkle a layer of cheese, cooked bacon and scallions onto pie crust. Repeat using remainer of ingredients. Carefully pour egg and mayo mixture into pie shell. Place on a baking sheet and put into over for 35-40 minutes. The top should be fully puffed and feel firm to the touch when done.
