Ingredients
- 2 tsp olive oil
- 3/4 medium onion, chopped
- 2 cloves garlic, minced
- 1 pkg spinach, frozen, thawed & drained
- 1 can diced tomatoes, drained
- 2 cups rice, cooked
- 2 cups navy beans, drained & rinsed
- 1-1/4 tsp Italian seasoning
- 1/4 tsp black pepper
- 1/2 cup Parmesan cheese, grated
Directions

Heat oil in large skillet over medium-high heat until hot. Add onion and garlic. Cook 7-10 minutes or until onion is tender. Add spinach and tomatoes. Cook 3-4 minutes more or until simmering.

Add rice, navy, beans, Italian seasoning, and pepper. Cook and stir 3-4 minutes more until thoroughly heated. Sprinkle with Parmesan cheese.
