Chestnut Mushroom Stuffing

Ingredients
- 1/2 lb. chestnut mushrooms
- 1/2 c. chopped onion
- 1 c. chopped celery
- 1 tsp. salt
- 1/4 tsp. pepper
- 1/8 tsp. crushed thyme
- 5 juniper berries, crushed
- 1/4 c. chopped parsley
- 1 c. cooked chestnuts, chopped
- 8 c. soft bread crumbs, made of day-old bread
- 4-6 slices bacon
- Melted bacon fat
Directions

Cut up bacon into lardons, then fry in skillet until cooked.

Cook mushrooms in skillet until well done. Add onion and celery; continue to cook until vegetables are tender. Add butter as needed to make juice. Add seasonings, chestnuts, and bread crumbs; mix well.

Bake in oven covered for 40 min. at 350F then uncovered for the last 15 at 375F
