Chestnut Mushroom Stuffing

Ingredients

  • 1/2 lb. chestnut mushrooms
  • 1/2 c. chopped onion
  • 1 c. chopped celery
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1/8 tsp. crushed thyme
  • 5 juniper berries, crushed
  • 1/4 c. chopped parsley
  • 1 c. cooked chestnuts, chopped
  • 8 c. soft bread crumbs, made of day-old bread
  • 4-6 slices bacon
  • Melted bacon fat

Directions

  1. Cut up bacon into lardons, then fry in skillet until cooked.

  2. Cook mushrooms in skillet until well done. Add onion and celery; continue to cook until vegetables are tender. Add butter as needed to make juice. Add seasonings, chestnuts, and bread crumbs; mix well.

  3. Bake in oven covered for 40 min. at 350F then uncovered for the last 15 at 375F
