Ingredients
- 1 loaf Italian bread, cubed
- 1 box frozen chopped spinach, thawed and drained
- 4 oz pepperoni sausage, quartered lengthwise and thinly sliced
- 1 large tomato, cored and sliced
- 1 cup shredded mozzarella cheese
- 1/2 tsp Italian seasoning
- 4 eggs
- 1 cup half and half
- 1/2 tsp salt
- 1/4 tsp pepper

Coat shallow 12 × 7″ baking dish with non-stick cooking spray.

Toss together bread, spinach, pepperoni, tomato, cheese and Italian seasoning in large bowl. Spread evenly in prepared dish.

Whisk together eggs, half-and-half, salt and pepper in a bowl. Pour evenly over bread mixture. Cover with plastic wrap. Refrigerate at least two hours or overnight. Bake at 425ยบ for 30 minutes.
