Lemon meringue pie

Ingredients
- 1/4 cup cornstarch
- 1 cup + 3 tbsp white sugar
- 1/3 cup lemon juice
- 3 egg yolks, beaten
- 1-1/2 cups water
- 1 tbsp butter
- 1 9-inch pre-baked pie shell
- 2 egg whites
- 1/4 tsp cream of tartar
Directions

Preheat oven to 400F.

Combine in a medium saucepan cornstarch, 1 cup sugar, and lemon juice.

Add eggs and water to cornstarch mixture; bring to a boil over medium heat.

Reduce heat and simmer gently 5 minutes, stirring constantly.

Remove from heat; stir in butter and pour mixture into pre-baked pie shell. Prepare meringue.

Whip egg whites until frothy; add cream of tartar and beat until stiff peaks form.

Beat the remaining sugar gradually. Spread meringue over filling all the way to edges of pie.

Bake 8-10 minutes or until golden. Remove from oven and cool 2 hours; refrigerate and serve cold.
