Lemon meringue pie

Ingredients

  • 1/4 cup cornstarch
  • 1 cup + 3 tbsp white sugar
  • 1/3 cup lemon juice
  • 3 egg yolks, beaten
  • 1-1/2 cups water
  • 1 tbsp butter
  • 1 9-inch pre-baked pie shell
  • 2 egg whites
  • 1/4 tsp cream of tartar

Directions

  1. Preheat oven to 400F.

  2. Combine in a medium saucepan cornstarch, 1 cup sugar, and lemon juice.

  3. Add eggs and water to cornstarch mixture; bring to a boil over medium heat.

  4. Reduce heat and simmer gently 5 minutes, stirring constantly.

  5. Remove from heat; stir in butter and pour mixture into pre-baked pie shell. Prepare meringue.

  6. Whip egg whites until frothy; add cream of tartar and beat until stiff peaks form.

  7. Beat the remaining sugar gradually. Spread meringue over filling all the way to edges of pie.

  8. Bake 8-10 minutes or until golden. Remove from oven and cool 2 hours; refrigerate and serve cold.
