Roasted Beets and Carrots

Ingredients

  • small beets
  • carrots
  • olive oil

Directions

  1. Trim beets, scrub and quarter (didn’t bother to peel them)

  2. Chop carrots roughly the size of beet quarters

  3. Place beets and carrots on a baking sheet.

  4. Drizzle with a small amount of olive oil.

  5. Sprinkle with rosemary, thyme and black pepper.

  6. Roast at 400 F for approximately 30 minutes, or until tender.
