- carrots

Directions

Trim beets, scrub and quarter (didn’t bother to peel them)

Chop carrots roughly the size of beet quarters

Place beets and carrots on a baking sheet.

Drizzle with a small amount of olive oil.

Sprinkle with rosemary, thyme and black pepper.

Roast at 400 F for approximately 30 minutes, or until tender.
