Breakfast Casserole

Ingredients

  • 12 eggs
  • 3/4 c. milk
  • 2 tsp. salt
  • 3/8 tsp pepper
  • 6 cups O'Brien frozen hashed browns
  • 3 c. shredded Swiss cheese
  • 1 lb. cubed Canadian bacon or ham
  • 1 c. cornflake crumbs, optional or gluten-free

Directions

  1. Beat eggs. Add milk, salt, pepper and mix well. Add potatoes, cheese and ham.

  2. Pour in creased 9 × 13 glass baking dish. Sprinkle with corn flake crumbs. Cover and refrigerate overnight.

  3. eheat oven to 325. Uncover and bake 50 mins. If going directly from fridge, it could take as long as 1 hour 10-20 mins.
