Slow Cooker Shredded Italian Beef for Sandwiches

Ingredients
- 1/2 to 1 jar Italian giardiniera, mild , 12 - 16 oz, drained (hot if you like with a bite)
- 1/2 to 1 jar pepperoncini, 12-16 oz
- 1 1/2 cups beef broth
- 1 envelope Goods Seasons zesty Italian salad dressing mix
- 1 (3-5 pound) any kind roast

Place roast in slow cooker, tall rather than wide if you have a choice.

Top roast with 1/2 jar each of giardiniera and pepperoncini for mild and whole jars for spicier. Mix salad dressing and broth and pour over roast. Cover and cook on Low for 18 hours.
