Melizanosalata (Eggplant Salad)

Ingredients

  • 2 large eggplants
  • salt
  • vinegar
  • olive oil
  • 3 garlic cloves
  • 1 cup finely chopped walnuts
  • 2 tbls. greek yogurt OR feta cheese

Directions

  1. Pierce egglants all over and bake in oven at 400 degrees for about 2 hours or until very soft.

  2. Peel and seed eggplants.

  3. Place in blender and blend until creamy but still a little chunky.

  4. Add salt, oil, vinegar and garlic to taste.

  5. Add the cup of walnuts and the yogurt or cheese and mix well.
