Melizanosalata (Eggplant Salad)

Ingredients
- 2 large eggplants
- salt
- vinegar
- olive oil
- 3 garlic cloves
- 1 cup finely chopped walnuts
- 2 tbls. greek yogurt OR feta cheese
Directions

Pierce egglants all over and bake in oven at 400 degrees for about 2 hours or until very soft.

Peel and seed eggplants.

Place in blender and blend until creamy but still a little chunky.

Add salt, oil, vinegar and garlic to taste.

Add the cup of walnuts and the yogurt or cheese and mix well.
