Kounoupithi Kapama (Baked Cauliflower with Tomatoes and Feta)

Serves 4 people
Ingredients
- 85ml olive oil
- 1 onion, sliced
- garlic cloves, crushed
- 8 tomatoes, seeded and chopped
- large pinch of ground cinnamon
- 2 tsp dried oregano
- salt and freshly ground black pepper
- 1 large cauliflower, cut into florets
- 1 tbsp freshly squeezed lemon juice
- 75g feta cheese, grated
Directions

Heat 2-3 tbsp olive oil in a heavy based frying pan and sauté the onion and garlic for 3-4 mins, or until the onion has softened.

Add the chopped tomatoes, cinnamon and oregano and season with salt and pepper. Stir and simmer, covered, for 5 mins.

eheat the oven to 190C/375F/Gas 5. Add the cauliflower to the tomato mixture, cover, and simmer for a further 10-15 mins or until the cauliflower is just tender. Remove from the heat.

Transfer the cauliflower and tomato mixture to a large, shallow dish and drizzle over the remaining olive oil. Sprinkle over the lemon juice and grated feta. Bake for 45-50 mins, or until the cauliflower is soft and the cheese has melted. Serve warm.
