Serves 2 peopleIngredients
- 1 medium Zucchini (julienne sliced)
- 2 large egg
- 1 tsp extra virgin olive oil
- 1/4 cup parmesan cheese
- 2 Tbs wheat bran
- 2 Tbs lc bread crumbs
Directions

Line cookie pan with non stick foil for easy cleanup.

eheat oven to 400.

Fork mix egg and extra virgin olive oil in small dish.

In a small Mixing bowl combine parmesan cheese, wheat bran, and lc bread crumbs.

Coat each zucchini with egg mixture then cheese mixture and arrange on cookie pan.

Bake 12 mins then broil 5 min. (no flipping necessary)
