Pesto Shrimp Skewers

Serves 18 people
Ingredients
- 2 pounds large shrimp, peeled and deveined
- 1 tablespoon olive oil
- Salt and pepper to taste
- Cooking spray
- 32 to 40 grape tomatoes (about 1 basket)
- Basil leaves or green pepper strips
- 3 tablespoons refrigerated pesto sauce
- 1/2 cup light mayonnaise
Directions

Preheat broiler.

In a medium bowl, combine shrimp, oil, salt, and pepper.

Toss to coat.

Place in single layer on broiler pan coated with cooking spray.

Broil 6 inches from heat source for 2 to 3 minutes, or until shrimp are pink.

Remove pan, turn shrimp, return to broiler, and cook 2 minutes, or until done.

Once cooked, remove shrimp from heat.

While they cool, combine pesto sauce and mayonnaise in a small bowl.

When shrimp are cool, thread onto skewers with grape tomates and basil leaves or pepper strips.

Serve with pesto dipping sauce.
