Gingerbread waffles

Serves 12 people
Ingredients
- 2 c flour
- 1 t baking soda
- 1 t baking powder
- 1 t ground ginger
- 1/2 t cinnamon
- 1/4 t cloves
- 2 t minced fresh ginger
- 1/4 t salt
- 1/4 t freshly ground pepper
- 2 large eggs
- 1/4 c sugar
- 1 c milk
- 1/2 c molasses
- 6 T butter, softened
- 2 T vegetable oil
- 1 T fresh lemon juice
Directions

Sift together flour, baking soda, baking powder, ground ginger, cinnamon, and cloves; stir in fresh ginger, salt, and pepper.

In a separate bowl, whisk together eggs, sugar, milk, molasses, butter, oil, and lemon juice until well blended.

Add egg mixture gradually to flour mixture, whisking until well blended.

Cook in a preheated, lightly greased waffle iron according to manufacturer’s instructions until golden.
