Lime Chicken

Serves 6 people

Ingredients

  • 1/2 cup fresh lime juice
  • 1/2 cup finely minced parsley
  • 2 T olive oil
  • 1.5 t cracked black pepper
  • 1/2 t salt
  • 2.5 lbs. skinless chicken breasts

Directions

  1. In plastic bag combine lime juice, parsley, oil, pepper and salt. Add Chicken breasts; coat well with marinade. Seal bag and refrigerate 1 hour or up to 2 days.

  2. Remove breasts from marinade. Pour marinade into small saucepan and place over high heat. Boil 1 min. and remove from heat.

  3. Place breasts on grill. Cover and cook 25 min., brushing occasionally with marinade. To serve, garnish chicken with lime slices.
