Shrimp Scampi

Serves 4 people

Ingredients

  • 1 pound shelled and deveined large shrimp (thawed if frozen)
  • 2 teaspoons olive oil
  • 1 1/2 teaspoons jarred chopped garlic
  • 1 tablespoon lemon juice
  • 1 teaspoon butter
  • two 8.8 ounce packages microwaveable rice

Directions

  1. Rinse shrimp and pat dry with paper towel.

  2. Heat oil in skillet, add shrimp, and let cook over medium heat for a minute or two until the underside turns pink.

  3. Turn shrimp over and cook an additional minute.

  4. Add garlic and lemon juice, and heat through, about one minute.

  5. Swirl in butter

  6. Meanwhile cook rice according to package directions.

  7. Serve 1 cup rice with a quarter of the shrimp.

  8. Tip: You can substitute 3 tablespoons refrigerated pesto sauce for garlic, lemon juice, and butter.
