Pumpkin Bread

good recipe to use with fresh pumpkins

Serves 18 people

Ingredients
- 4 cups sugar
- 1 29oz can or 4 cups pumpkin
- 3 eggs
- 1 cup vegetable oil
- 5 cups flour
- 1 tbsp baking soda
- 2 tsp cinnamon
- 1 tsp ground cloves
- 1 tsp nutmeg
- 1 tsp salt
- 2 cups raisins (and/or currants)
- 2 cups coarsely chopped walnuts or pecans
Directions

Combine sugar, pumpkin, and eggs in a large bowl

Beat until well-blended

Add oil, beat to combine

Mix dry ingredients (except fruit/nuts)

Thoroughly blend dry mix into pumpkin mix

Stir in raisins and nuts

Fill prepared pans (3 9″×5″ or 4 8″×4″ loaf pans 3/4 full

Bake at 350F for 1 hour 15 minutes (or until a toothpick at the center comes out clean and bread has pulled away slightly from pan edges)
