Carrot-Apple Cake

Ingredients

  • Pie:
  • 1.5 cups sugar
  • 1.5 cups vegetable oil
  • 3 eggs
  • 2 tsp vanilla
  • 2 cups sifted flour
  • 2 tsp cinnamon
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 2 cups shredded carrots
  • 1 cup coarsely chopped apples
  • 1 cup raisins
  • 1 cup chopped pecans
  • Frosting:
  • 2 3oz packages cream cheese, softened
  • 1 tbsp milk
  • 2 tsp vanilla
  • Dash of salt
  • 1 lb (?) powdered sugar
  • 1/2 cup chopped pecans

Directions

  1. Preheat oven to 350F

  2. Combine first four ingredients in large bowl

  3. Blend

  4. Combine dry ingredients and mix into first mixture

  5. Stir in remaining ingredients

  6. Bake in 2 greased 9" pans or one 9″×13″ pan at 350F for 35-45 minutes

  7. Cool pie, frost with Pecan-Cream cheese frosting

  8. Frosting:

  9. Blend first 4 ingredients thoroughly

  10. Beat in sugar until smooth, spreading consistency

  11. Fold in nuts
