Chile Relleno Casserole

Serves 4 people

Ingredients

  • 4 7-oz cans whole green chile
  • 1 pound shredded Monterey Jack cheese
  • 5 eggs
  • 1.25 c. milk
  • 0.25 c. flour
  • 0.5 t. salt
  • 0.5 c. grated Cheddar cheese

Directions

  1. cut green chiles into wide strips

  2. layer chiles and jack cheese in 3 qt. casserole dish

  3. Mix eggs, milk, flour, and salt

  4. Pour in dish, to cover layers

  5. Sprinkle cheddar on top

  6. Bake in 350 degree oven for ~45 minutes(?)
