Ingredients
- 1-2 T. oil
- 1.25 c. lentils
- 3 c. broth
- 1 t. salt
- dash of pepper
- 1.5 c basmati rice
- 1 c. broth
- 0.75 c. tomato paste
- 2 c. tomato juice
- green pepper
- celery leaves
- 2 t. sugar
- 0.5 t. salt
- 1 t. cumin
- cayenne pepper to taste
- 2 T. oil
- 3 onions
- plain yogurt
Directions

Base:

Brown lentils in oil for 5 minutes, stirring often

Add broth (or water), salt, and pepper, bring to boil

Cook uncovered for 10 minutes over medium heat

Add rice and more broth/water

Bring to boil

Reduce heat to low and cook until rice is done, about 20 minutes

Sauce:

Combine sauce ingredients (tomato paste – pepper) and bring to boil

Reduce heat and simmer 20-30 minutes

Onions:

Sautee onions and garlic until browned

Serve with sauce, onions, and yogurt
