Meatball Subs

This recipe makes a lot. I halve the recipe (don’t ask about the 1/2 egg, it is messy) for our family and still have meatballs to freeze. I freeze the extras before I bake them and then pull them from the freezer and put them directly in the oven for about 25-30 minutes. With the whole recipe, I can usually get about 25-30 meatballs.

Ingredients
- 1 cup bread crumbs
- 3/4 cup parmesan cheese
- 1/2 cup whole milk
- 1/2 cup beef broth, low-sodium
- 1/2 cup parsley, fresh
- 3 eggs, beaten separate then added
- 2 Tbsp dried oregano
- 1 Tbsp minced garlic
- 1 Tbsp salt
- 1 Tbsp ground black pepper
- 2 tsp dried basil
- 1 tsp red pepper flakes
- 2 pounds ground beef
- 20 oz canned tomatoes
- 6 hoagie buns
- 6 oz. mozzarella cheese

eheat oven to 450.

Mix all ingredients first, then add meat and mix well.

Form golf ball-sized meatballs.

Pour a little beef broth over each one. Don’t be stingy with the beef broth!

Bake for 20 -25 minutes.

Meanwhile, make the sauce and warm over the stove. When the meatballs are done, add meatballs to sauce.

Prepare buns by placing a slice of cheese on each bun. Bake for 5 minutes until cheese is melted and bread is toasty. When buns are done, assemble subs and serve.
