Ingredients
- 1/4 cup dark rum
- 1 cup dark raisins
- 2 cups cooked and mashed sweet potatoes
- 1 cup sugar
- 1/2 cup buttermilk
- 1 large egg
- zest of 1 orange
- 1 tsp. vanilla
- 1/2 tsp. ground cinnamon
- 1/2 tsp. ground nutmeg
- 1 ready-made pie shell
Directions

Preheat oven to 425 degrees.

Bring the rum to a simmer in a small saucepan over medium-high heat. Add the raisins and set aside for 15 minutes.

Beat the sweet potatoes, sugar, buttermilk, egg, orange, vanilla, cinnamon and nutmeg until semismooth. (No lumps, but fibrous.)

Stir in the raisins and rum and pour the filling into pie shell.

Bake 10 minutes, reduce oven to 350 degrees and continue baking until the filling is set and a knife inserted into the center comes out clean, about 45 minutes longer.

Cool on a wire rack before slicing and serving.
