Lemon Chicken and Rice

Serves 4 people
Ingredients
- 1/2 cup Italian dressing
- 1 lb boneless skinless chicken breasts, cut into strips
- 1 cup chicken broth
- 1 cup small broccoli florets
- 1 red pepper, cut into strips
- 1 cup thinly sliced carrots
- 2 cups Minute Brown Rice, uncooked
- 1 tsp lemon pepper
- 2 tbsp grated Parmesan cheese
Directions

Heat dressing in large skillet on menium-high heat. Add chicken; cook and stir 1 minute.

Add broth, broccoli, red pepper and carrots. Bring to a boil.

Stir in rice. Return to boil. Reduce heat to low; cover. Simmer 5 minutes. Remove from heat. Let stand 5 minutes. Stir in lemon pepper; sprinkle with cheese.
