Greek-style penne with fresh tomatoes, feta, and dill

Ingredients

  • 2 lbs tomatoes, halved, seeded, chopped
  • 1/4 onion, chopped
  • 7 oz feta cheese, crumbled
  • 6 tbsp fresh parsley, chopped
  • 1/4 cup fresh dill, chopped
  • 1/4 cup olive oil
  • 1 box penne pasta

Directions

  1. Mix first 6 ingredients in large bowl. Set tomato mixture aside.

  2. Cook pasta in large pot of boiling, salted water until just tender but still firm to bite, stirring occasionally. Drain.

  3. Add hot pasta to tomato mixture and toss to coat. Season to taste with salt and pepper and serve.
