Balsamic Chicken Cutlets

Serves 4 people
Ingredients
- 1 pound boneless, skinless chicken breast halves
- 1 teaspoon olive oil
- 2 Tablespoons balsamic vinegar
- 1 Tablespoon light margarine
- 2 Tablespoons chopped parsley
Directions

In a non-stick skillet, saute chicken in olive oil until cooked, about 5 min. per side depending on thickness.

Transfer to a serving platter.

Add balsamic vinegar and margarine to the skillet. Stir until margarine is melted. Pour sauce over chicken and sprinkle with parsley.
