Italian Chicken

Serves 6 people

Ingredients

  • 6 chicken breast halves
  • 2 eggs, slightly beaten
  • 6 thin slices Mozzarella cheese
  • 6 thin slices Swiss cheese
  • 1/4 c. Parmesan cheese
  • Bread crumbs
  • Butter
  • Marinara sauce:
  • 1 large onion
  • 1 clove of garlic, minced
  • 1/4 c. olive oil
  • 1 large can of tomatoes
  • 1 t. chopped parsley
  • 1 t. basil
  • Salt & pepper to taste

Directions

  1. Saute onion and garlic for 5 min.

  2. Add tomatoes and seasonings and bring sauce to a boil.

  3. Simmer for 20 min.

  4. Dip chicken in egg and roll in bread crumbs.

  5. Brown chicken in butter.

  6. Put half of sauce in large casserole dish.

  7. Add sauted chicken.

  8. Overlay cheese slices on chicken and add Parmesan on top.

  9. Pour remainder of Marinara sauce on top of everything.

  10. Bake at 350° for 45 min. uncovered.
