Lasagna

Serves 8 people

Ingredients

  • 1 c. chopped onions
  • 3 cloves garlic, minced
  • 2 T. olive oil
  • 1 lb. lean ground beef
  • 2-14 oz. cans stewed tomatoes
  • 6 oz. can tomato paste
  • 2 t. crushed dried basil leaves
  • 1 t. crushed dried oregano leaves
  • 1/2 t. sugar
  • 1/4 t. black pepper
  • 2 c. cottage cheese
  • 1/2 c. grated Parmesan
  • 1/4 c. chopped fresh parsley
  • 1 c. shredded mozzarella
  • 8 oz. wide lasagna noodles

Directions

  1. Cook onions and garlic until soft.

  2. Add ground beef, cook well, and drain.

  3. Add tomatoes with juice, paste, basil, oregano, sugar and pepper.

  4. Stir until well blended.

  5. Simmer for 30 min.

  6. Combine cottage cheese, 1/4 c. Parmesan and parsley and set aside.

  7. Cook noodles for 7 min. in boiling water.

  8. Put a thin layer of sauce in a 13 × 9 × 2 in. pan.

  9. Add in layers 1/2 noodles, 1/2 cheese mixture, 2 T. Parmesan, 1/3 c. mozzarella and sauce.

  10. Repeat.

  11. Bake at 350° for 45 min.

  12. Let stand 15 min. before serving.
