Salmon Loaf

Ingredients
- Loaf:
- 1 lb. cooked, flaked salmon
- 3 eggs, separated
- 3/4 c. milk
- 1 c. soft bread crumbs
- 1 c. shredded cheddar cheese
- 1 t. minced onion
- 1/2 t. salt
- 2 T. lemon juice
- Sauce:
- 3 T. butter
- 3 T. flour
- 1 T. lemon juice
- 1 1/2 c. milk
- 3/4 t. salt
- 1 1/2 T. parsley
Directions

For the salmon loaf: mix salmon, egg yolks, and remaining ingredients.

Beat egg whites until stiff and fold in.

Put into a one quart dish.

Bake at 350° for 30-35 min.

For the sauce: melt butter and mix in flour.

Stir in milk.

Cook until thick, stirring constantly.

Add lemon juice and parsley just before serving.
