Ingredients
- 1 cup dried currants
- 1 apple, medium, peeled and chopped (about 1 cup)
- 3/4 cup milk
- 1/3 cup granulated sugar
- 1/4 cup vegetable oil
- 1 cup all-purpose flour
- 1 cup quick-cooking oats
- 2 tsp baking powder
- 2 tsp cinnamon
- 1 tsp nutmeg
- 1/2 tsp salt
- 1/4 tsp allspice
- 2 tbsp brown sugar or coarse raw sugar crystals
Directions

Preheat oven to 400F. Line 12 muffin cups with paper baking cups.

Combine currants, apple, milk, sugar, and oil in a medium mixing bowl.

Stir together flour, oats, baking powder, cinnamon, nutmeg, salt, and allspice in a small bowl. Stir into raisin mixture until just combined.

Spoon batter into prepared muffin cups. Sprinkle tops with 1/2 tsp brown sugar or sugar crystals.

Bake 20 minutes or until golden-brown and toothpick inserted comes out clean.
