Porcupine meatballs

A childhood favorite, made a little lighter

Cook time: 45 minutes
Serves 8 people

Ingredients

  • 10 Saltine crackers
  • 1/2 cup milk
  • 1.5 pounds ground beef (could also use chicken or turkey)
  • 1 can Campbellā€™s Tomato Soup
  • 1 small onion, sliced
  • Dash Worcestershire sauce
  • 1/2 cup of white rice
  • Salt & pepper to taste

Directions

  1. Soak crackers in milk.

  2. In a separate bowl, season meat with salt, pepper, and Worcestershire sauce.

  3. In a saucepot, boil soup with 1/4 can of water and onion.

  4. Mix crackers, and meat and rice together. Form into meatballs and add to sauce mixture.

  5. Cover and cook for about 45 minutes.
