Impossibly Easy Pumpkin-Pecan Pie

Ingredients

  • 1 cup canned pumpkin (not pumpkin pie mix)
  • 1 cup evaporated milk
  • 1/2 cup Original Bisquick
  • 1/2 cup sugar
  • 1 tablespoon margarine or butter, softened
  • 1 1/2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla
  • 2 eggs
  • 1/2 cup chopped pecans
  • 1 1/2 cups frozen (thawed) whipped topping
  • 1/4 teaspoon pumpkin pie spice
  • 8 pecan halves if desired

Directions

  1. Heat oven to 350 degrees.

  2. Grease pie plate, 9 × 1 1/4 inches.

  3. Stir all ingredients except pecans and Spiced Topping until blended.

  4. Stir in chopped pecans.

  5. Pour into pie plate.

  6. Bake 35 to 40 minutes or until kife inserted in center comes out clean.

  7. Cool completely, about 1 hour.

  8. Cut pie into slices.

  9. Garnish each serving with Spiced Topping and pecan.

  10. Store covered in refrigerator.

  11. For Spiced Topping:

  12. Stir whipped topping and pumpkin pie spice until smooth.
