ITALIAN CHICKEN CHOWDER

more of a stew than a soup, but delicious!

Cook time: 12 minutes
Serves 3 people

Ingredients

  • 1/4 cup italian dressing
  • 1/2 pound chopped chicken
  • 398ml can stewed tomatoes & juice
  • 1 cup chicken broth
  • chopped zucchini
  • 3/4 cup elbow macaroni
  • 1 cup sliced fresh mushrooms
  • 1 tsp thyme
  • grated mozza

Directions

  1. In a large saucepan, heat the italian dressing. Add the chicken (as you chop it, if necessary), cooking & stirring occasionally until no longer pink.

  2. Add the stewed tomatoes, broth, zucchini, macaroni, mushrooms, & thyme. Bring to boil on high heat.

  3. After it boils, reduce heat to minimum and simmer 8 minutes or until macaroni is tender.

  4. Ladle into bowls and sprinkle mozza on top of each bowl.

  5. I don’t even like Italian dressing, but I like this meal!
