Sausage and Vegetable Spaghetti

Ingredients

  • 1 spaghetti squash
  • 1 pound Italian sausage
  • 1 medium onion, chopped
  • 1 medium zucchini, coarsely chopped
  • 1/4 snipped parsley
  • 1 large clove garlic, crushed
  • 1 tablespoon dried basil leaves or three leaves fresh basil
  • 4 medium tomatoes, coarsely chopped
  • 1/2 grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Directions

  1. Prick squash with a fork. Cook in 400-degree oven until tender, about 1 hour.

  2. Remove sausage from casing.

  3. Cook and stir sausage and onion in 10-inch skillet over medium heat until sausage is done, about 10 minutes.

  4. Stir in zucchini, parsley, garlic and basil.

  5. Cover and cook 3 minutes.

  6. Stir in tomatoes and parmesan cheese.

  7. Remove from heat. Cover.

  8. Remove squash from oven. Cut squash into halves; remove seeds and fibrous strings. Remove squash strands with 2 forks; toss with salt and pepper.

  9. Serve sausage mixture over squash.

  10. Serve with additional parmesan cheese if desired.
