(from hughbert’s recipe box)

Cook time: 10 minutes
Serves 6 people
Ingredients
- 1 tsp instant yeast
- 1 tbsp malt powder or brown sugar
- 2-3 cups unbleached flour
- 1 tsp salt
- 1 cup warm milk
Directions
-
Combine all dry ingredients except flour and mix
-
Add 2 cups of flour and mix
-
Add milk and mix
-
Add more flour as needed to get one doughy ball
-
Knead for 5-10 mins
-
Cut into 6 equal sized pieces
-
Roll each piece into a short log, around 1 cm in diameter
-
Turn on oven to 200C
-
Leave dough to sit for 5-10 minutes
-
Continue rolling and stretching
-
Leave dough to sit once more for 5-10 minutes
-
Continue rolling as needed to obtain a length of around 40 cm, then form into pretzel shape
-
Heat 1 cm of water in a shallow pan (e.g. frying pan)
-
When boiling, add each pretzel one by one, for around 15-20 seconds on each side, drying on a paper towel
-
Pretzels can be frozen at this stage for later consumption; only cook what you want to eat now!
-
Place pretzel on baking paper on a baking tray, and sprinkle salt or other seasonings to your liking (not too much salt otherwise these pretzels might make you thirsty)
-
Bake for 10-15 minutes, until golden brown
-
Enjoy while toasty hot!
