Lemon Zucchini Muffins

Ingredients

  • 2 C flour
  • 1/2 C sugar
  • 1 T baking powder
  • 1 t salt
  • 1 t grated lemon peel
  • 1/2 t nutmeg
  • 1/2 C nuts, chopped
  • 1/2 C golden raisins
  • 2 eggs
  • 1/2 C milk
  • 1/3 C oil
  • 1 C zucchini, packed and shredded

Directions

  1. Preheat oven to 400 degrees. In a large bowl, mix flour, sugar, baking powder, salt, lemon peel, and nutmeg. Stir in nuts and raisins. In a small bowl, beat eggs with a fork; beat in milk and oil. Add to flour mixture, then sprinkle zucchini on top. Stir until just blended. Fill greased muffin tins 2/3 full and bake until they pass the toothpick test or spring back when touched in the center.

  2. Can bake as a coffee cake for 30-35 min.
