Ingredients
- 2 C flour
- 1/2 C sugar
- 1 T baking powder
- 1 t salt
- 1 t grated lemon peel
- 1/2 t nutmeg
- 1/2 C nuts, chopped
- 1/2 C golden raisins
- 2 eggs
- 1/2 C milk
- 1/3 C oil
- 1 C zucchini, packed and shredded

Preheat oven to 400 degrees. In a large bowl, mix flour, sugar, baking powder, salt, lemon peel, and nutmeg. Stir in nuts and raisins. In a small bowl, beat eggs with a fork; beat in milk and oil. Add to flour mixture, then sprinkle zucchini on top. Stir until just blended. Fill greased muffin tins 2/3 full and bake until they pass the toothpick test or spring back when touched in the center.

Can bake as a coffee cake for 30-35 min.
