Pasta with Asparagus and Fried Eggs

Ingredients

  • 1 lb asparagus, cut in pieces
  • salt
  • pepper
  • 1 box spaghetti
  • 4 tbsp olive oil
  • 4 eggs
  • pecorino cheese, shaved

Directions

  1. Bring a pot of salted water to a boil.

  2. Cook the asparagus in the boiling water for one minute. Remove with a slotted spoon and pat dry.

  3. Cook pasta in boiling, salted water till al dente.

  4. Meanwhile, heat 2 tbsps olive oil in a non-stick skillet over moderate heat. Add the asparagus and cook, stirring occasionally, until golden brown. Transfer the asparagus and oil to a large bowl.

  5. Add remaining olive oil to the skillet and heat. Crack eggs in the skillet and cook sunnyside up until the whites are barely firm.

  6. Drain the pasta, add to the asparagus and oil and toss to coat. Divide the pasta onto serving plates

  7. Place one egg on each portion of pasta. Sprinkle the cheese.

  8. Each diner should pierce the egg and stir it into the pasta.
