Cheesy Veggie Scramble

Ingredients

  • 1 teaspoon butter
  • 1 tablespoon thinly sliced scallion
  • 2 tablespoons thinly sliced zucchini or asparagus
  • 1 tablespoon sliced red or green pepper
  • Salt
  • Pepper
  • 2 eggs
  • 1 tablespoon grated reduced-fat mozzarella or cheddar

Directions

  1. In a small skillet, melt butter.

  2. Add vegetables, salt, and pepper, and cook over medium heat for 3 minutes, stirring frequently.

  3. Crack eggs directly into skillet.

  4. Using a fork or whisk, scramble into the vegetables.

  5. Sprinkle on cheese and cook about 1 1/2 minutes, or until eggs are cooked and cheese has melted.

  6. Serve with toast, bagels, or English muffins.
