Ingredients
- 2 cups of sugar
- 2 cups plain flour
- 2 tsp baking powder
- 1 tsp salt
- 1 1/2 cups vegetable oil
- 3 tsp cinnamon
- 4 eggs
- 3 cups grated carrots
- 1 cup chopped nuts
- 1 tsp vanilla sugar
- Topping:
- 180g cream cheese (philladelphia)
- 50g butter
- 1 tsp vanilla sugar
- 1 cup chopped nuts
- icing sugar
Directions

sift together sugar, flour, baking powder, salt, cinnamon

Stir in oil

Add eggs

Add carrots, nuts, vanilla.

Mix thoroughly

Pour into greased cake tin

Bake at 180c for 30 mins

Topping:

Beat cream cheese and butter together.

Add vanilla and nuts
-
Add enough icing sugar so that it becomes spreadable

Spread onto cooled cake
