Puffed Apple Pancakes

Ingredients
- 50g butter
- 4 tart apples (granny smiths), peeled, cored and cut into eighths
- 3 tbs brown sugar
- 1 tsp vanilla sugar
- 1 tbs lemon juice
- 90g plain flour
- salt, pinch
- 1 tsp lemon zest
- 1tbs sugar
- 4 eggs
- 185ml milk

preheat oven to 220c

Melt butter in frying pan with oven proof handle

Add apples and cook for 5 mins over medium heat.

Add brown sugar, vanilla sugar, and lemon juice and cook, shaking occasionally until sugar dissolved.

Mix flour, salt, lemon zest and sugar together in large bowl.

Make a well in center and add eggs and milk, whisking lightly – dont worry too much about lumps.

Pour batter evenly over apples (its fine if they show through)

Put pan in oven and cook for 15 mins until puffed and golden.

Serve immediately
