Lemon Garlic Shrimp & Pasta

Serves 6 people
Ingredients
- 1/4-1/2 C olive oil
- 3 cloves garlic, minced
- 10-12 fresh lemonbalm leaves, minced
- pinch of basil
- 1 T lemon zest
- 1/4 C thinly sliced red onion
- capers, to taste
- lemon juice, a few good squeezes
- 1 lb. shrimp
- 1 lb. light pasta (angel hair, fettucine, etc.)
- salt and pepper to taste
Directions

While cooking the pasta, heat the olive oil with the garlic, lemonbalm, and basil until aromatic. Add shrimp and cook until heated through.

Combine lemon zest, lemon juice, onion, and capers together in a large serving bowl.

Rinse pasta and add it to the bowl along with the oil and shrimp mixture. Season to taste, toss, and serve.
