Economy Pound Cake

Can substitute 8 oz. cream cheese for 1/4 C shortening

Ingredients

  • 2 C sugar
  • 1 C shortening
  • 4 eggs
  • 3 C flour
  • 1 C buttermilk
  • 1 t soda
  • 1 t baking powder
  • 1 t vanilla
  • 1 t lemon juice
  • yellow food coloring

Directions

  1. Cream sugar and shortening. Add one egg at at time; beat well after each addition. Mix soda, flour, and baking powder, and sift together. Add flour and buttermilk alternately. Add 4 or 5 drops of food coloring, then add vanilla and lemon juice. Beat at low speed for 4 minutes. Bake 55-60 minutes at 350 degrees in a greased and floured tube pan.
