Caramelized Onion and Supreme Crostini

Ingredients
- 2 tablespoons unsalted butter
- 2 pounds Spanish onions, thinly sliced (about 8 cups)
- 2 tablespoons olive oil
- 1 teaspoon chopped fresh thyme
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 loaf French bread, sliced 1/4 inch thick (18 slices)
- 8 ounces Supreme cheese, rind removed, cut into 18 thin slices
Directions

Preheat oven to 350 degrees.

Melt butter in large pan over medium heat; add onions.

Cook, stirring frequently, 15 minutes until caramelized, adding 1 tablespoon water.

Remove from heat; stir in salt and pepper.

Mix together olive oil and thyme.

Brush both sides of bread slices with oil mixture; place on baking sheet.

Bake 10 to 12 minutes, turning once, until toasted.

Remove from oven; leave oven on.

Top each bread slice with 1 tablespoon onions and 1 slice Supreme cheese.

Return to oven; bake 2 minutes, until cheese melts slightly.

Serve warm.
