Gorgonzola and Pear Pasta

Ingredients

  • 2 tablespoons butter
  • 2 firm pears, sliced
  • 1 pound rigatoni pasta
  • 8 ounces BelGioiso Creamy Gorg cheese
  • 1/4 cup boiling pasta water
  • 1 tablespoon BelGioioso Mascarpone cheese
  • 1/3 cup chopped walnuts

Directions

  1. Melt butter in skillet over low heat; add pear slices.

  2. Saute until warm; remove from heat and set aside.

  3. Boil pasta in salted water.

  4. Meanwhile, cut CreamyGorg cheese into small cubes; place into large sauce pan.

  5. Add 1/4 cup boiling pasta water to cheese.

  6. Heat over low heat, stirring until sauce consistency.

  7. Drain the pasta when al dente.

  8. Return hot pasta to pot; stir in Mascarpone cheese to coat pasta.

  9. Stir in half of the sauce; fold in sauteed pears and chopped walnuts.

  10. Place pasta mixture in serving bowl; top with remaining sauce.

  11. Garnish with additional walnuts, if desired, and serve immediately.
