Pepperoni Pasta Salad

Ingredients

  • 4 ounces rotini pasta
  • 2 cups grape tomatoes, halved
  • 8 ounces provolone cheese, cubed
  • 2 ounces sliced pepperoni, halved
  • 1/2 cup sliced green onions
  • 1/4 cup olive oil
  • 1/4 cup white wine vinegar
  • 1/2 teaspoon dried Italian seasoning
  • Lettuce leaves (optional)

Directions

  1. Cook pasta according to package directions until tender but firm; drain.

  2. Rinse with cold water and drain again.

  3. Ina large bowl combine cooked pasta, tomatoes, cheese, pepperoni, green onions, olive oil, vinegar and seasoning.

  4. Add slat and pepper to taste.

  5. Toss to coat.

  6. Cover and chill 30 minutes.

  7. Serve in a lettuce-lined bowl, if desired.
