Vegan Tofu Eggsalad

Ingredients

  • 1 lb Firm Tofu, drained,
  • 1/2 onion, diced very small red
  • 1 quart water
  • 1/4 cup white vinegar
  • 1/4 tsp salt, or to taste
  • 1/8 tsp black salt, Indian
  • 1/8 tsp turmeric
  • 2 tsps spicy mustard
  • 1 tsp hot sauce, or to taste
  • 1/8 tsp paprika

Directions

  1. Cut Tofu into small dice.

  2. In large pot, put water, vinegar, and pinch of salt.

  3. Bring to boil.

  4. Add Tofu cubes, bring to boil again, and turn to medium simmer.

  5. Simmer 15 minutes.

  6. Drain Tofu.

  7. Sprinkle with black salt (if available), and mix well.

  8. Put 1/3 of Tofu cubes in a bowl.

  9. Mash this Tofu. Mix in turmeric, to make “egg yolk”.

  10. Mix in mustard, hot sauce, and paprika.

  11. Add remaining 2/3 of Tofu cubes, and diced onions and mix gently.

  12. Serve on bread, with mayo of your choice, lettuce, etc.

  14. Chop “egg” finely.

  15. Mix with chopped celery,

  16. bell pepper, onion, etc.

  17. Dress with veg mayo to

  18. desired consistency.

  19. Add a bit of mustard, if desired.

  20. Add salt and pepper to taste.
