Chicken Salad with Grapes

Ingredients
- 3 1/2 cups cooked chicken
- 1 large stalk celery, thinly sliced
- 1/2 to 3/4 cup maynnaise
- Juice of 1 lemon
- salt and freshly ground black pepper
- Pinch of cumin or curry powder (optional)
- 2 T. finely chopped fresh parsley or chives
- 1 1/4 cups red or green grapes or a combinations, cut in half
- 1 to 2 cups mixed greens
Directions

In a lare bowl, toss the chicken and celery. Gently fold in about 1/4 cup of the mayonnaise and the lemon juice. Add the salt, pepper, cumin or curry powder if desired, and parsley. Add more mayonnaise if you like a moister salad. Gently fold in the grapes.

Place the salad on a bed of mixed greens or use to make sandwiches.
