Lava Cake

Ingredients

  • 170g semi-sweet baking chocolate (or 70% cocoa chocolate bar)
  • 170g butter (diced, room temp)
  • 3 eggs
  • 1/2 cup sugar
  • 1/3 cup flour
  • butter for ramekins

Directions

  1. Preheat oven ot 175C.

  2. Melt chocolate on low heat in bain-marie (double-boiler).

  3. Take off heat, and stir in diced butter until butter melts.

  4. In a bowl, beat eggs and sugar until it starts to whiten.

  5. Stir in melted chocolate, then the flour.

  6. Butter 4 ramekins, and pour in chocolate mixture.

  7. Bake for about 10 minutes.

  8. Release and tip upside down onto a plate. Serve immediately.
