Rosemary and garlic roast potatoes

- 800g potatoes
- 2-3 tbsp olive oil
- Salt and pepper
- 10g butter (optional)
- 3 stalks of rosemary, leaves picked and chopped (or 2tsp dried)
- 1 clove of garlic, minced

Preheat the oven to 200 degrees C/gas 6. Wash and scrub the potatoes, cut into 1-inch cubes.

Place the potato cubes in a roasting dish and add the olive oil, butter and garlic. Season with salt and pepper. Toss to mix well and cook in the middle of the oven for 40-45 minutes until tender. Mix and turn the potatoes once in the middle of cooking to get them evenly golden brown.
