Aidell’s Red Beans and Rice

Serves 4 people

Ingredients

  • 2 tablespoons olive oil
  • 2 links Aidells Cajun Style Andouille Sausage, chopped
  • 1 teaspoon Cajun seasoning (or thyme)
  • 1 small onion, chopped
  • 2 stalks celery, chopped
  • 1 clove garlic, finely chopped
  • 1/4 cup roasted red peppers or pimentos, chopped
  • 1 15 ounce can of red beans or kidney beans
  • 1/2 cup tomato sauce
  • 1/2 cup chicken stock
  • 4 cups cooked long grain, white rice

Directions

  1. Heat the olive oil in a large skillet and saute the sausage, Cajun seasoning, onion, celery, and garlic over medium heat for 5 minutes.

  2. Add the red peppers, beans, tomato sauce, and chicken stock.

  3. Simmer 10 minutes.

  4. Serve the mixture over cooked rice.
